Fancy Baked Beans

We’re giving the humble beans on toast a makeover with this hearty homemade version. This recipe wins hands down when it comes to flavour, texture and simplicity — a great brunch, lunch or weeknight dinner.

Ingredients:

    Ingredients
  • 1 tablespoon olive oil

  • 1 large white onion

    finely chopped

  • 2 cloves garlic

    minced

  • 1 tablespoon tomato purée

  • 1 x 400g tin butter beans

    drained & rinsed

  • 1 x 400g tin chopped tomatoes

  • 1 teaspoon vinegar

    (we used balsamic)

  • 1 teaspoon maple syrup

  • 1 teaspoon harissa/chipotle paste

    (optional)

  • pinch of sea salt & black pepper

    To Serve
  • 2 slices sourdough bread

Method:

    Drizzle the oil into a large frying pan over medium heat, add the onion and fry for 8–10 minutes until softened. Tip in the garlic and tomato purée and fry for 30 seconds until it smells fragrant.

    Add the butter beans, chopped tomatoes and 50ml / 1.7 fl oz water into the pan, bring to the boil; then turn down the heat and simmer until slightly reduced. To finish, stir in the vinegar and maple syrup, along with a pinch of salt and crack of black pepper. At this point, you can also add some harissa or chipotle paste, to taste. Serve on toasted sourdough.
